We deal directly, and as a customer, you have direct access to us as the manufacturer. There are no intermediaries. Our production process includes six quality control hold points including stamping, water grinding, handle casting, polishing, sharpening and packaging.

Sharpening your Kurschmann

The single most important aspect of caring for your knives is keeping them sharp. Not only does a dull knife make your work in the kitchen more difficult, it also makes it more dangerous. It bears repeating: a dull knife is more dangerous than a sharp one. A dull knife requires you to apply more pressure, which in turn makes it more likely to slip and cut you.

What is sharpening? – sharpening your knife involves grinding away small amounts of metal to reshape the edge of the knife. Imagine having to grind a U into a V. This is usually done on a whetstone and requires some skill. If you find this too daunting, have it sharpened by a professional. This should only be required once or twice a year. There are also some good electronic sharpeners available that can do this for you.

What is honing? – Honing is about aligning the edge of the knife. The edge is there, and it’s sharp, but because it’s so thin, it has a tendency to fold itself over after a period of use. Honing simply uncurls that edge and re-straightens it. Honing is something any home cook can and should do themselves. A honing steel or rod is a simple tool that will realign the edge of a knife with just a few strokes. It’s good to hone before each use (as opposed to sharpening, which you might only do once or twice a year).

Caring for your Kurschmann

A good knife is no ordinary kitchen utensil and it must be treated with the utmost care. No matter how sharp a blade is, or expensive, it’s a fragile piece of equipment. The higher the carbon content of a blade, the sharper it will be but the more likely it is to rust or chip. Look after your knife and it will serve you well for many years. Here are a few care tips.

1. Never leave your knives in the kitchen sink – no matter how tempting this is, it’s dangerous and may cause premature pitting resulting in rust spots.

2. Never wash your knives in the dishwasher – dishwashing soaps are highly abrasive and dishwashers also tend to ding and scratch the blades, not to mention what heat and water do to beautifully crafted handles. If you see a knife that is ‘dishwasher safe’ it has a low carbon content and high alloy content, they won’t rust, but they won’t sharpen either. For any knife worth owning, hand-washing is the way to go. Soap and hot water are all you need, and be sure to dry it right away rather than letting it air dry.

3. Always use a cutting board – use cutting boards made of wood, plastic, or bamboo. Never use glass cutting boards. Nor should you chop directly on your granite or marble countertop. Cutting boards are cheap. Use one.

4. Never store your knife in the utensil draw – blades are easily scratched and dented from being jostled around in the drawer every time you open it. If you don’t have any other place to store your knives at least use a knife sheath to guard the blade.

Bottom line – use it, wash it, dry it, store it. If you follow those steps, your knife will prove to be worth every penny.
